Our Story & Origin

Émeline De Sloovere crafts wine in Brugny, in the Coteaux Sud d’Epernay, on the same hills her grandfather planted and where her mother still works beside her. After graduating from the OIV MSc and traveling global wine regions, Émeline returned determined to build a future for Champagne rooted in living soils, biodiversity, and regenerative farming.

The domaine now expresses two identities: Émeline’s own range under the Émeline De Sloovere name, and the classic family label Champagne De Sloovere-Pienne. Both follow the same philosophy: precision, minimal intervention, long lees ageing, and Champagnes shaped by time rather than manipulation.

Terroir & Viticulture

The vineyards lie on clay-limestone slopes around Brugny, between roughly 120 and 350 meters of altitude. Old massal-selection vines, dense plantings, and naturally modest yields create deep, layered fruit built for long ageing.

Regenerative viticulture includes permanent plant cover, homemade compost to feed soil life, zero herbicides, herbal teas for vine health, and gentle cellar work with minimal sulphur.

Émeline De Sloovere — Psyché Extra Brut

Psyché — Extra Brut

Style: Daring, textural Meunier–Chardonnay blend with energy, fine bubbles, and a savoury-mineral backbone.

Nose: Fresh orchard fruit, citrus peel, white flowers, and delicate chalky notes with a touch of brioche.

Palate: Lively and silky, mixing ripe fruit with crisp acidity; broad mid-palate wrapped around a cool, stony core.

Finish: Fresh, generous, and persistent, with saline lift and fine, buzzing mousse.

  • Blend: 50% Meunier / 50% Chardonnay – Base Wine 2020 (80%) Creation of perpetual reserve started in the 2000s (20%)
  • Origin: Coteaux Sud d’Epernay
  • Ageing: ~10 months in tanks on fine lees, then ~36 months on lees in bottle
  • Dosage: 5 gr/l Extra Brut
  • Fermentation: Stainless steel + concrete; minimal sulphur, no fining or filtration
  • Service: 46–50 °F (8–10 °C)
  • Pairing: Smoked salmon blinis, ceviche, veal blanquette, crudo with citrus

Émeline De Sloovere — N°5 Chardonnay

N°5 Chardonnay — Brut Nature

Style: Powerful, old-vine Blanc de Blancs with long lees ageing and a chiselled, gastronomic profile.

Nose: Lemon cream, white peach, quince, toasted hazelnut, and chalk dust.

Palate: Dense yet vertical; layered citrus and stone fruit over a deep, smoky-mineral core and fine mousse.

Finish: Very long, dry, and saline, with lingering chalk, brioche, and citrus zest.

  • Blend: 100% Chardonnay (old vines, massal selection)
  • Origin: Coteaux Sud d’Epernay
  • Ageing: ~24 months in stainless steel on fine lees, then ~96 months on lees in bottle (RD)
  • Dosage: Brut Nature (0 g/L)
  • Fermentation: Stainless steel; minimal sulphur, no fining or filtration
  • Service: 50–54 °F (10–12 °C)

De Sloovere-Pienne — Carte d’Or Brut

Carte d’Or — Brut

Style: Fruity, refreshing Meunier-led Champagne with creamy texture and easy, crowd-pleasing charm.

Nose: Pale gold mousse with aromas of apple, ripe peach, brioche, and soft spice.

Palate: Juicy orchard fruit and pastry notes on a supple, creamy mousse; bright acidity keeps everything lifted.

Finish: Long and mouth-watering with citrus and stone-fruit echoes and a gentle, creamy feel.

  • Blend: 72% Meunier / 25% Chardonnay / 3% Pinot Noir – 30% Reserve Wines
  • Ageing: Minimum 30 months on lees in bottle
  • Dosage: 9 gr/L Brut
  • Fermentation: Stainless, concrete, and older oak; minimal filtration
  • Service: 46–50 °F (8–10 °C)

De Sloovere-Pienne — Prestige Brut

Prestige — Brut

Style: More structured, Chardonnay-driven cuvée with complexity, fine bubbles, and a gastronomic frame.

Nose: Citrus (lemon, grapefruit), white flowers, peach, and subtle spice with hints of toasted brioche.

Palate: Creamy yet focused; ripe citrus and stone fruit layered over chalky minerality and persistent mousse.

Finish: Refined, long, and mouth-coating, with citrus, hazelnut, and mineral notes lingering.

  • Blend: 75% Chardonnay / 22% Meunier / 3% Pinot Noir – 45% Reserve Wines
  • Ageing: Minimum 40 months on lees in bottle
  • Dosage: 9 gr/L Brut
  • Fermentation: Stainless and older oak; no aggressive filtration or fining
  • Service: 48–52 °F (9–11 °C)
