Our Story & Origin

In 2019, siblings Aurore and Florian Laval took over the family cellars in Boursault, poised above the winding Marne River, to carry forward the legacy shaped by their father, Michel Laval, who began estate bottling in 1979. Raised among vats, vines, and chalk dust, the siblings inherited not only their father’s savoir-faire but also his belief that great Meunier is born from restraint, precision, and patience. Under their leadership, the domaine began its next evolution — one rooted in detailed parcel work, long élevage, and a gentler, cleaner touch in both vineyard and cellar. In 2020, Aurore and Florian unveiled their own signature line: Champagne Aurore & Florian Laval. Their range represents a modern viewpoint on the Vallée de la Marne — wines shaped by low dosage, extended lees ageing, and a respect for the quiet power of Boursault’s clay-limestone and sandy soils. Each cuvée reflects their guiding philosophy: let time polish structure, let terroir speak clearly, and let the fruit remain pure.

Terroir & Viticulture

The Laval family farms 6.5 hectares (16 acres) around Boursault. Clay-limestone and sandy pockets above the Marne balance generosity and tension — ideal for Meunier, Pinot Noir, and Chardonnay.

Farming is eco-responsible: natural grassing, reduced inputs, composts that feed soil life, and hand harvesting parcel by parcel. In the cellar: first-press juice only, gentle handling, long lees ageing, and low dosage to preserve precision.

Symposium (Blanc de Noirs)

The siblings’ calling card — a cuvée that balances Meunier’s ripe fruit with the purity of long lees ageing.

Nose: baked pear, red apple skin, white flowers, almond, crushed chalk.

Palate: supple orchard fruit and pastry cream, followed by citrus zest and saline minerality.

Finish: long, dry, mouthwatering; tension balanced by soft fruit persistence.

  • Blend: 80% Pinot Meunier & 20% Pinot Noir

  • Ageing: 16-24 months

  • Dosage: 2.2 gr/l Extra Brut

  • Fermentation: 60% Oak / 30% Steel / 10% Stoneware

  • Service: 46–50 °F (8–10 °C) in tulip glass

Pairing: oysters, chicken & truffle risotto, ahi tuna, brie & almonds

UT Prius

A pure, minimalist expression of Meunier — tension, chalk, and clarity with minimum dosage.

Nose: white flowers, quince, lemon peel, salted almond, cool chalk.

Palate: linear and precise; citrus-driven energy with fine mousse and mineral grip.

Finish: long, bone-dry, saline; the definition of clean Boursault terroir.

  • Blend: 100% Pinot Meunier

  • Ageing: 42 months on lees

  • Dosage: 1.12 gr/l Brut Nature

  • Fermentation: Mostly stainless / Minimal Oak

  • Service: 46–50 °F (8–10 °C) in tulip glass

L’Extra Brut

A poised blend of Meunier, Pinot Noir, and Chardonnay — textured by the clay-limestone and sandy marl of Boursault, refined by time and purity.

Nose: Mirabelle plum, red apple skin, toasted brioche, crushed hazelnut, chalk dust.

Palate: orchard fruit and pastry lifted by citrus zest and stony salinity; broader than UT Prius.

Finish: dry, persistent, mouthwatering with a long, salty echo.

  • Blend: 40% Pinot Meunier / 40% Pinot Noir / 20% Chardonnay

  • Ageing: 7 years on lees

  • Dosage: 2.5 gr/l Extra Brut

  • Fermentation: Stainless Steel + Partial Oak

  • Service: 46–50 °F (8–10 °C) in tulip glass
